A well-known dessert in Cambodia is Sankhya Lapov, or pumpkin custard. A tiny pumpkin or kabocha squash filled with coconut cream or milk, palm sugar, eggs, and salt is the traditional dessert. The custard is placed inside the squash after the top is cut off and the seeds removed, and it is then steam-cooked to a specific doneness. It is pleasant both in the heat and in the cold.

It is also available in Thailand and Laos in a comparable form. This meal is typically prepared by Khmers during religious or traditional celebrations
