Pineapple tarts originated in Singapore as a result of European influence. As the name implies, the pastry used to make pineapple tarts is very similar to pate sablee, or tart dough, which is made by rubbing butter into flour and then adding egg as a binder. This method yields cookies that have a deliciously crumbly, "short" texture.

Why pineapple tarts are a popular pastry during Chinese New Year has never occurred to us. That's because pineapples are referred to in Hokkien as "Ong Lai," which literally translates as "fortune come." Giving these as gifts will signify wishing the recipient good fortune and luck, as it is considered auspicious to have them during Chinese New Year.
